Chicken nuggets and coleslaw

I don't eat out much so I may not be a good judge of chicken nuggets in general. I only know that as popular as they are, some are afraid to eat them from a chain because of additives.  So I find these yummy AND guilt free. So, enjoy.

Chicken nuggets
2 lbs ground chicken not too lean- ideally 15-20 percent fat
2 eggs
2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/8 c flour unless you are using lean meat

Mix these ingredients together in a bowl.

Prepare in your food processor:
1 c flour ( I prefer whole wheat)
1/4 c chicken fat- more about this on another post
1/2 tsp salt
1/2 tsp black pepper

Blend together until mixture resembles crumbs. Pour crumbs into bowl. Set oven for 375.  Grease large sheet or pan, something with sides. Begin making balls and coating with crumbles.  Bake at 375 for 30 minutes or until nuggets are as golden as you would like.

Now what to serve with them??

We served coleslaw and homemade bread from the bread machine( how easy is that?  I'll post some bread machine recipes later).  This is the cole slaw recipe:

1 head cabbage, shredded
2 carrots, peeled and shredded
1 cup purple cabbage and beet lactofermented sourkrout
1/2 c mayo
1/2 c sour cream

Mix together. Salt and pepper to taste.

Sometime soon I'll post some notes on lacto-veggies and their food value.

Many thanks to my mother, my friend Michelle, and Windy Meadows Family Farm for help, seasoning ideas and chicken for my test batches.  If you live in the Dallas area you can purchase this ground chicken at Texas Meats at the Dallas farmers market. Also you can mail order thru Slankers Grassfed Meats online.
